What about Eliza? Johnny is quite picky though so some things could be quite good and he'd have half of the items on one side of his plate. I quote "you know I don't eat mushrooms, peppers, onions, anything with color or small, etc." (that's pretty much how it goes). Claire, do you still have that yummy almond pie type dish or tart or whatever it was-you used to make it all the time when I lived with you-it may of been your moms recipe. It was almost lilke an almond creme pie and so simple yet so delicious-hopefully you don't find it-ha!

Late Night, what's new?!

So I up again, yes it really is 1:3o in the morning, but really what is new. I thought I would share a website that Mare told me about for picky eaters. It's http://picky-palate.com I think it is a pretty good site. I just made the Me Oh My Toasted Spaghetti Pie and we really liked it. It makes enough for a good size family and then you are supposed to put some aside so you can have spaghetti the next day so for me that is a hit!! See what you think of the site, but I guess this lady has some picky eaters, which who doesn't (Mare quiet!). Umm, I am still waiting for Hali to post something, I know she has some really good homemade stuff...

Thai Peanut Chicken

4-6 chicken breasts
salt and pepper
1 c. peanut butter(creamy or crunchy)
1-2 tsp minced garlic
4 tsp soy sauce
2 tbsp brown sugar(add a little more if want it sweeter)
1/3 c. coconut milk(comes in can in chinese section)
1 tbsp lime juice
red pepper flakes(1/4-1/2 tsp)
1/4-1/2 c. water

Optional: 1 tsp worchesterchire, 1 tsp fish sauce, lemon juice, etc.?, 2 tsp ginger

I just cook the chicken breasts in the frying pan cut up in big, think chunks-more thai style with a little canola or veggie oil until browned). Season in the beginning with some salt and pepper.

Sauce:

Nuke peanut butter about 3o sec so soft.
Add soy sauce, brown sugar, garlic, (ginger-I do), lime juice, coconut milk, red pepper flakes(the more you add the hotter). Basically mix it all together and then add water. Can cook a bit on medium in sauce pan or just throw into the chicken as is. Then add whatever frozen veggies. We really like the one with broccoli, carrots or pea pods and water chesnuts. Just cook on med until veggies are warm and cooked through. Serve up. COuld serve with thai noodles or rice or whatever. WE do without with the low carb lifestyle. Would be fantastic though!

Aunt Robyns shells(my version)

2 bags of sea shells(by American beauty-just bigger than large shells and not as big as stuffing shells).
1 big jar of Mushroom prego
1 small velveta cheese
1 bag sharp cheddar cheese
Can add hamburger meat or sausage
Garlic salt

Just cook shells al dente(can use large shells or the big stuffing shells-Aunt Robyn has used all). Then put in a big bowl when super hot and drained. Add spaghetti sauce and cut up velvetta with maybe 1/3 of sharp cheddar too. Then mix up and add meat if want and a little garlic salt-maybe 1/2 tsp or little more. Put in a 9x13 pan and add the rest of the shredded sharp cheese on top. I've put a little parm in with it too. I cook it until cheese melts at 350. Aunt Robyn uses crock pot. The key is make sure it's plenty "saucy" or can seem dried out. You can do a crock pot too. YUm.

Super Easy(smell delicious) crock pot Ribs

1 slab of baby back or spare ribs(I bought both(on sale) and half them for vaiety and put the other halves in freezer).

Crock pot

1 onion(I prefer sweet)
1 apple(used Gala-but whatever)
Favorite BBQ sauce(KC Masterpiece)

So, just cut your ribs so they fit the crockpot. I cut up onion in sliced and pulled apart in rings and put on bottom. Then I cut up an apple and put that on top and put a little salt and pepper on top. Then set your ribs in and put a little salt and pepper on the. Then dump however much of your favorite BBQ sauce on top and cook away on slow for however long-maybe 8 hours. I did 1 hour high and now on slow. I've never had this but it smells divine. Ryans friends parents made it camping and they said it's delicious. So, look for rib sales-ours were just $1.50 a lb. I don't know if you should put the onion and apple on top of everything so the flavors seap into the ribs-I'm gonna stir it some in a bit and get the onions and apples on top so I get the best of both worlds. I bet the hubbies will love it. OH, wouldn't garlic smashed potatoes be good with it and corn on the cob-well you all enjoy those carbs for me while I eat my veggies-ha!!

CPK Salad

Head of lettuce
Black Beans rinsed and drained
Corn drained
Tomatoes
Shredded Chicken

Dressing:
Half bbq sauce and half ranch. Make sure you just do the dressing on the side.

Put on tortilla chips!

Chicken Enchiladas

2C. cooked diced chicken
2 cans cream of chicken
3/4C. sour cream
2 cans diced chilis (I only do one)
1/2 small onion chopped
2 green onions chopped (usually don't have these)
cheese (cheddar, jack)

Mix all ingredients, put some of the mixture on the bottom of 9x13 pan. Fill tortillas, make sure you have some mixture left over to put on top. Put the rest on top and then add as much or as little (in my case) cheese as you want. Bake at 350 for 30 minutes.

Joni's Chimichangas

2/3 C. Salsa
1t. cumin
1/2t. oregano
1 1/2C. chicken (shredded)
1C. cheese
2 green onions (alot of times I don't have these)

Mix all of this together and then put in tortillas (I use whole wheat). Put 1T. butter over the top and salsa. Bake at 400 for 25 minutes.

***An easy way to shred chicken is to cut it in chunks and then beat it a little bit and it will shred.

Lindi's Whole Wheat Bread

Karl (yes I said Karl) makes this every Sunday for our family, and since we have 4 adults eating here we go through all 4 loaves a week!

Combine and let sit for a few minutes:
4 cups of warm water
3 TBSP yeast

In large bowl combine:
1/3 cup Oil
2/3 cup Honey
2 TBSP lemon juice
1 TBSP salt

Add yeast mixture and add:

10-12 cups whole wheat flour or until soft but not sticky.

Cover and let rise in bowl for 20 minutes.
Punch down and shape into bread loaves. (4 large loaves/ 2 large& 2 small and a few rolls/ 1 large&2 small & 16 rolls)
Let rise again for 15 minutes.

Bake 350 for 25-30 minutes. (I cover mine with foil after about 15 minutes so that they don't burn on top)

Joni's Taco Salad

This is my kids FAVORITE meal!

2 cups cooked shredded chicken (about one large breast)
taco seasoning
head of lettuce
can of black beans (drained and washed)
tomato
salsa
ranch
tortilla chips

Shred the chicken and then add taco seasoning to it, add everything except the ranch, chips and salsa into a bowl. For the dressing do half ranch, half salsa and voila you have a meal. Oh put it all on tortilla chips. By the way don't put the dressing on the salad, keep it to the side, or else you will have soggy salad!

Whole Wheat Pancakes (BEST EVER)

Always Soft Sugar Cookies

1 c. sugar
2 eggs
1/2 c. shortening
1 tsp. vanilla
1 c. sour cream
1 tsp. soda
1 tsp. salt
2 tsp. baking powder
4 c. flour

Cream together sugar, shortening, eggs and vanilla. Add sour cream. Mix and dry ingredients together. Slowly add wet and dry together. Roll out 1/4 inch thick. Cut shapes and cook at 375 for 7-10 min. That's right-you don't put them in fridge for dough to get cool-it's ready as is. They remind you of the yummy sugar cookies with tons of pink frosting at the gas stations. Don't overcook-undercook if anything and decorate-yum!! THe sweetness is totally in the frosting you make! Here ya go Hilary-these are the ones!

Scotcharooooos!

1 c. sugar
1 c. Karo syrup
1 c. peanut butter
6 c. Rice Krispies
1 bag chocolate chips
1/2 bag butterscotch chips

Bring sugar and Karo syrup to a boil barely. Take off heat, then add peanut butter quickly to mixture of sugar and syrup. Mix fast and well. Pour mixture over Rice Krispies anxiously awaiting in a bowl. Mix quickly then flatten mixture in a 9x13 greased pan. Melt chocolate chips and butterscotch chips over stove. Spread over Rice Krispies.

Loaded Chicken

Barbecue chicken breasts or thighs with favorite BBQ sauce(Masterpiece).
Cook some bacon and break up in pieces. Add bacon to cooked chicken and load with cheese. Let melt and dig in. WE usually put chicken on a foil covered baking sheet and add the bacon and cheese and broil a few min until cheese melts(less mess for BBQ).

Barb's marinated chicken

1 20 oz. coke(or sprite or dr. pepper)
1/3-1/2 c. soy sauce(I prefer low sodium)
1 tbsp. garlic salt
Chicken-boneless/skinless breasts-however many you want to marinate. Barb does thighs a lot.

Marinate overnight 18-24 hours. Then just BBQ and it's really good and flavorful.

Healthy Chicken Parmasan

4 Boneless, skinless chicken breasts
Favorite spaghetti sauce
Mozzerella cheese/parm cheese or anything white and tasty

Lay breasts in pan. You can brush with olive oil and flavor with some salt and pepper. Then just pour some spaghetti sauce on top of each chicken. Then load the mozz chesse with some parm cheese and cook at 350 for 30 min. It may need to cook a bit longer. It's good with a low carb pasta or Best life pasta.

Roasted Veggies and or Potatoes

Cut up broccoli and cauliflour and toss with olive oil, salt and pepper. Roast anywhere from 400-425 for 15-20 min. It's healthier if the veggies are al dente.

Cut up potatoes and carrots and roast at 425 for 30-50 min-of course toss with olive oil, salt and pepper.

Slice zucchini in coin shapes or long ways in 4 thick slices and brush with olive oil and put parmasan cheese on top. You can add some pepper too. Broil for a few min or roast at a 400 to 400 plus temp until it's cooked. Good way to get zucchini or squash in your menu.

Also, another good way is cut up yellow crooked neck squash in coins and just saute in pan with a couple tbsp butter and delicious-Grandma Ruths idea.

Sauce:

1/4 c. ketchup
1/4 c. vinegar

1/4 c. barbecue sauce
1/4 c. ketchup

Barb's better than Funeral Potato-Potatoes

This puts regular funeral potatoes to shame!

1 pkg 26 oz. frozen shredded hash browns or obrien cubed potatoes
3 tbsp. cooking oil
(fry in oil until browned)

2 c. diced ham
2 can cream of potato soup
2 c. sour cream
2 c. cheddar cheese
1/2 c. shredded parmasan cheese

Fry the potatoes. Remove from heat and stir in ham, soup and sour cream and 1 1/2 c. of the cheese. Pour in greased 9x13 pan. Add rest of cheese on top. Cook uncovered at 350 for 35-40 min. You'll never go back to typical funeral potatoes after these-aye carumba!

Lukes Peanut Butter Cookies

1/2 c. butter-softened
1/2 c. sugar
1/2 c. brown sugar
1/2 c. peanut butter
1 egg
1 tsp. vanilla
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

Blend wet ingredients and then add peanut butter. Mix dry ingredients and add to wet. Roll into balls and roll in sugar. Press with a sugared fork two ways. Luke always triples or quadruples recipe or don't get many cookies. Bake at 375 for 10-12 min.

Mare's Chocolate Chip cookies

12 oz. chocolate chips
1 c. butter
1 c. shortening
1 c. brown sugar
2 c. sugar
4 eggs
3 tsp. vanilla

5 1/2-6 c. flour
2 tsp. salt
2 1/2 tsp. baking soda
1 tsp. baking powder

Creme shortening and butter and add sugar and creme until sugar incorporated. Add one egg at a time. Add dry ingredients and then chocolate chips.

Bake at 350 for 10-12 min. Note: dough should have a flour taste-if not add a little more flour.

Andrew's Delicious Oatmeal/Chocolate Chip Cookies

4 eggs
2 tsp vanilla

4 c. flour

Better than box pancakes

1c. flour
2 1/2 tsp. baking powder
1-2 tbsp. sugar
1/2 tsp salt

Mix dry ingredients and then add wet

1 egg
1 1/4 milk
3 tbsp melted butter

Lightly whisk wet and dry ingredients together(don't overmix-leave lumps). Just cook on frying pans at a medium to medium low heat with a dash of Pam each time. These are light and just good pancakes. I prefer warm syrup with powdered sugar-delicious! My kids love em and they're easy and quick!

Moms Chicken Divan

Layer bottom of 9x13 pan with steamed broccoli cooked al dente-about 5 min. It usually takes about 2 crowns of broccoli-or you can use frozen. Next put 1/3 of the sauce mixture over broccoli. Next take about 4-6 cooked, cubed or shredded chicken breasts and cover broccoli. Then layer the remaining sauce on top of the chicken and cover with cheese. You can do cheese and bread crumbs too.

Sauce mixture is 2 cream of chicken, 1 cream of celery (or 3 cream of chicken), 1 1/2 c. mayonaise( I use light), 2 tbsp lemon juice and mix all together with whisk.

Cook steamed rice or noodles to put mixture on top of. Ryan prefers to put the chicken divan in flour tortillas. It's also good to cook the white rice in chicken broth(same amount as water) or use chicken flavor rice. All good.

Katies Chicken Pot Pie

Cook 4-6 chicken breasts(boil or I prefer to cook in oven at 350 for 28 min brushed with olive oil and salt and pepper-way more flavor). Let chicken cool some and cut up in cubes or bigger shred clumps.

Sauce: Dice 1/2-1 sweet onion. Season with some salt and pepper. Saute until translucent(clearish) in a couple tbsp butter and little olive oil. Once sauteed(about 7 min on med) add 3 cups warm chicken broth(nuke in microwave). Add 5 tbsp flour-warm chicken stock or broth will help the flour mix in without clumps. Stir and cook a few min and then add 1 can cream of chicken soup-mix and cook on low about 5 min.

Veggies: Peel n Cut up 4-7 potatoes and 4-7 carrots(amount personal preference) and cook in boiling water until al dente(soft but with a firmness still). Drain. In large bowl mix chicken, veggies and sauce mixture. Add a cup or two of frozen peas. Usually needs some more salt and pepper-taste. Mix it up gently so veggies stay whole. Put in 9x13 pan sprayed with pam.

Crust: I have used frozen pie crust or pastry crust-both good. I've also made homemade pie crust which is the best. We also like jiffy cornbread(usally 3 boxes) as a topping-just mix according to box directions and pour on top. I usually cook at 400 like box says and then 375 until crust completely cooked. The jiffy cornbread gives it a sweetness-fun and different.

Time management: 1. put chicken in to cook. 2. Get veggies in to boil. 3. Make sauce. 4. Pie crust. It would be really good with crust on the bottom too. I usually make more so I can freeze one-freezes great. There's lots of good chicken pot pie recipes out there-this is a combo of 3. Bon appetit!

Katies Chili

2 tbsp canola oil
1 medium onion-diced
1 red pepper-diced
2 cloves garlic-minced
1 cup carrots-diced
1 large zucchini-diced
2 14 oz diced tomatoes with green chilis
1 14 oz can crushed tomatoes
1 14 oz black beans rinsed and drained
1 14 oz kidney beans rinsed and drained
2 Tbsp chili powder(cut in half for kids)
1 Tbsp cumin
1-2 tsp sugar

Cook onions in canola oil 3-4 min. Add ground turkey or 93% lean ground beef-1 lb or so-salt and pepper to taste. Brown until meat cooked. Add red pepper, garlic and carrots and cook for 5 min. Add zucchini and cook a few more minutes-until soft. Add tomatoes, beans sand seasonings and cook 20 minutes. Taste for seasoning-add more if desired.

Katie's Healthy Soup (SO GOOD)

Cook 3 chicken breasts-I just cook it in a skillet in smaller pieces with olive oil and a little salt and pepper till browned.

K, in soup pan put 4 cans of low sodium chicken broth. Then put in a diced up medium onion, cut up 3-4 carrots and 3 potatoes. Let thos all cook until veggies are softening. Then add 2 cans of Italian style diced tomatoes(gotta be italian style-gives the soup it's great flavor). Then add the chicken and cut up two zucchinis and add-soup is ready when the zucchini softens. It's so delicious. You could eat it with soft wheat bread or homemade wheat rolls for added treat or put rice in it. I think the rice was great for the kids to thicken it up. We used brown rice and the kids loved it! You can add a little salt to the soup too and I add a decent amount of pepper.

Teriyaki Burgers

2 lbs ground beef
1/3 cup soy sauce
2 TB brown sugar
1 TB pineapple juice
1/4 tsp. ground ginger
1 clove of garlic, minced
Mix and marinate. Serve with mustard, mayonnaise, sprouts, pineapple slices and avocado (guacamole)
Put on hamburger buns

Ta Da!

Well since I'm leaving tomorrow to go back to Utah, I decided to have a fun morning with them. I woke up bright and early at 8 a.m. well the kids woke me up, we then headed to walmart and got the necessities to make Baaklyn waffles. We had so much fun cooking together. Here are some pictures!
